“Raw Milk” Pecorino cheese aged
Brisighella raw milk Pecorino cheese aged is processed completely by hand, following an ancient recipe that dates back to 1200, and matured naturally on wooden boards for over 90 days. Produced with Italian milk, itis distinguished by its solid but buttery consistency, its white-yellow colour and its sweet flavour that hides a slight hint of sharpness from its long maturation.
As well as savouring it alone, with a glass of good, full-bodied red wine, or with honey and compotes, it can also be used in many culinary recipes.
Origin of the MILK: ITALY. Inedible rind treated with extra-virgin olive oil.
Raw fresh sheep’s MILK, rennet, selected lactic cultures, Cervia natural sea salt.
