From the traditional “affioramento” rising method, a soft, doughy flock is produced, distinguishing this cheese by its consistency, which is fluffy like a cloud, or “nuvola”. Nuvola is characterised by its pure white colour, its creamy, fluffy consistency and its sweet, delicate flavour.
