Cacio del Borgo di Brisighella with wild mountain herbs, made with 100% Romagna cow’s milk, is a dairy excellence that elicits memories of an ancient peasant tradition. In the past, the need to conserve cheese for later consumption led farmers to use herbs. Today, our master cheesemakers have dusted off this ancient method, rediscovering particular scents in the grass that give cheese a distinctive flavour.

After an initial ageing of about 50 days, the cheese is refined with local wild mountain herbs, which amplify its sensory profile, giving light and pleasant herbaceous hints to nose and palate.

The herbaceous aftertaste makes it perfect for ending a good meal as an accompaniment to Sangiovese wine, or a fragrant, still white wine. It is also excellent as an appetiser or in combination with honey and jams that pleasantly counterbalances the cheese flavour.
