Amaranth is an extremely ancient plant. Together with corn, it was a fundamental food for the Aztecs and Incas. Arriving in Europe in the eighteenth century, it was first used as an ornamental plant, only later being cultivated as a vegetable.
Amaranth is not part of the Gramineae family so it is not a grain, does not contain gluten, and is a source of fibre.
90% yellow corn flour, 10% amaranth flour.
