Brisighella Sheep’s Ricotta
A dairy product made from sheep’s milk whey, using the traditional “affioramento” rising method. It is characterised by the addition of fresh sheep’s milk, which makes the cheese even more creamy and delicate. It is produced from the whey left from the processing of the cheese with raw milk. The ricotta that rises through this process is collected with a special skimming spoon. It is packaged in a protective atmosphere, guaranteeing its sensory quality.
