“Gentile” Mora Romagnola Salami is the result of an artisan production process using the top-quality cuts of Mora Romagnola pork.
High-quality salami made from selected cuts of ham and loin from the Mora Romagnola, with diced lard, black peppercorns and Cervia sweet salt. Aged for a minimum of 60 days and encased in “delicate” natural intestine. Gluten-free and traditionally tied by hand.
Excellent savoured as part of the typical starter in Romagna.
The Mora Romagnola is a unique, ancient native breed of pig, the focus of a recovery project which has saved it from extinction. The Mora Romagnola feeds mainly on grains and acorns from our cultivations, and spends its time in the open air, moving freely in over 90 hectares of woods and hills on our farm in the hills of Brisighella.
