Mora Romagnola pancetta
Aged Mora Romagnola Pancetta, with Cervia sweet salt and black pepper. Stretched Pancetta is a variety of pancetta taken from the lean part of the pork: it is aged in its original form, and for this reason it can be square, rectangular, in blocks or in slices, striped with pinkish-red and white.
This pancetta melts in the mouth, thanks to its veining of top-quality fat, and has an aromatic but “soft” and delicate flavour.
The Mora Romagnola is a unique, ancient native breed of pig, the focus of a recovery project which has saved it from extinction. The Mora Romagnola feeds mainly on grains and acorns from our cultivations, and spends its time in the open air, moving freely in over 90 hectares of woods and hills on our farm in the hills of Brisighella.
