“Raw-milk” Pecorino aged under hay
“Raw-milk” Pecorino aged under hay, is a seasoned cheese that is processed entirely by hand following an ancient recipe that dates back to 1200. It is impossible not to be conquered by its compact yet buttery paste, its colour between white and straw yellow, and its sweet taste with a light spicy hint on the palate, yielded by natural seasoning on fir boards first and then under hay harvested from mountain fields. During aging, the cheese becomes soft and absorbs hints of hay and flowers that blend with its lactic and buttery hints.
