  • 500 g of Premium Pasta
  • 225 g water
  • a pinch of salt


Pour 500 g of Premium Pasta onto the work surface, forming a crater in the centre. Add, little by little, 225 g of water and a pinch of salt, and mix slowly with a fork, starting from the centre. Then work by hand until you have a smooth, homogeneous dough.
If you have a food processor: put all of the ingredients in and start the machine. Leave it to knead until a ball is formed. Leave to rest under a damp cloth for around 30 minutes. Divide the dough into two pieces, pass them through the pasta maker, and cut into the desired shape.
