INGREDIENTS for 4 servings:

  • 150 g of PREMIUM PASTA
  • 300 g of fresh ricotta cheese
  • 2 eggs
  • 100 g of parmesan.


Knead all the ingredients well on a floured surface; you should end up with a very soft dough. Then form small cylinders, about the same thickness as a finger, and cut them into 2 cm-long pieces. Boil for no longer than three minutes. Drain carefully, using a perforated spoon, and serve with a tomato and basil sauce, butter and parmesan.
