Calibrated flour – type “00”
Our Calibrated Flour has been created to obtain the best results when preparing traditional fresh and extruded pasta, optimising the use of mixers and mechanical pasta extruders. It guarantees a perfect product that does not discolour, keeping its light colour for several days. It offers “superior” results in terms of durability, but can be worked like any regular flour: it has a balanced protein-carbohydrate ratio to ensure a high volume product when cooked, which is also elastic, translucent, with a rough surface that helps sauce to stick better.
