INGREDIENTS:

  • 250 g of Almaverde Bio organic soft wheat flour – type “1”
  • 2 whole large eggs
  • 150 ml of semi-skimmed milk
  • 150 g of caster sugar
  • 125 g of butter (at room temperature)
  • 1 Golden Delicious apple
  • 1 packet of baking powder
  • 1 sachet of vanilla flavouring
  • Peel from 1 lemon
  • 1 pinch of salt

Ingredients for decoration:

  • 2 Golden Delicious apples
  • cane sugar (as needed)
  • icing sugar (as needed)

PREPARATION:

Remember to take the butter out of the fridge so that it is nice and soft. Then pre-heat the oven to 180°C, and grease and flour a springform cake tin (diameter approx. 26-28 cm). Carefully peel the apples: cut one into small, uniform pieces to add to the cake mix; cut the other two into slices (not too thin) to decorate the top of the cake. In a mixing bowl (or in a mixer), beat the eggs with the sugar until they form a dense, smooth cream, and then add the butter and milk while continuing to stir. Finally, add the flour, yeast, vanilla flavouring, salt and grated lemon zest, and mix until you have a soft, smooth mixture. Add the pieces of apple, stir well, and then carefully pour the mixture into the cake tin, levelling it with the back of the spoon. Place the slices of apple in concentric circles and sprinkle the top of the cake with cane sugar, and cook for 45-60 minutes. Once cooked, leave the cake to rest for around 30 minutes. Take it out of the cake tin, place it on a serving plate, let it cool, and then sprinkle with icing sugar.
